I am Andrea from the University of Barcelona, I just wanted to congratulate you for your incredible proposal. From our group we are in the process of designing a menu under the concept of planetary health diet with the aim of promoting sustainable and healthy food in the canteens and get to give options to the traditional menu offered by the faculties. I think we are at the same point as you, where we are aware of the importance of the consumer (students, professors, catering staff) in the choice of low impact food and I think that offering an environmental impact label can be a super interesting proposal to raise awareness. Can’t wait to see your progress and results.
